simple {last minute} appetizers

I think by now everyone can guess we love to entertain and I love putting together parties.

The thing is though...I don't always have a ton of time or notice when friends will be dropping by.  We like to do things spur of the moment and my husband likes to surprise me on his way home from the office with a call or text that he invited someone over.

So I'm used to that by now...but as you can also guess...I always need to do a mad dash around the house picking up stray toys, dishes, laundry, etc that our littles have left around.

That doesn't always leave a ton of time to put together appetizers.

I always like to have fruit, veggies, cheese, lunch meat, and some type of party bread on hand {cupcakes too...ha!} so I can put together some simple appetizers quickly.  Here are two of my faves lately:

swiss//prosciutto//cucumber appetizer

what you'll need:

a tiny loaf of party rye

whipped cream cheese

Alpine Lace deli cheese

cucumber slices

prosciutto

To make them, layer a dab of whipped cream cheese on rye, a piece of Alpine Lace swiss, a thin slice of cucumber, and a thin roll of prosciutto.  If you're feeling fancy, top it with a sprig of dill. :)

apple//swiss//ham appetizer

what you'll need:

apple slices {honeycrisp and braeburn are our faves}
Alpine Lace deli cheese
deli sliced ham

To make these, simply cut up an apple and top with small slices of Alpine Lace swiss and a roll of ham.  {These are a big hit as after school snacks around here, too!}
