Chocolate chip pumpkin muffins


I love this fall recipe.  It's so simple but turns out really well.

All you need is a few bags of chocolate chip muffin mix and a can of pumpkin.  I heard there's supposed to be a pumpkin shortage...our grocery store had loads of it.


Have I ever mentioned I love polka dots?


Make the muffin mix as usual, but cut back on the water by a little.



Add in a few heaping spoonfuls of pumpkin.


I also add in a few sprinkles of ground ginger, cinnamon and ground cloves.  Pumpkin pie spice works well, too.



Wait (im)patiently.



And then quickly pack them up to give to a friend so you don't eat the whole batch yourself! 

I saw that Darby also shared how she makes these with a glaze.  I wasn't sure how those would travel, so next time I'm making it for me!

    The pumpkin shortage is over :) I was so glad to hear, as soon as Libby announced that pumpkin would hit the shelves by Oct. I ran to see if it was there and YIPPEE it was, I bought some a couple weeks ago and was glad to see it. I love pumpkin. Keeping my fingers crossed they don't have another bad season again :)

  16. I tried making these, but they stuck to the paper. Do you think this happens because they were mixed too much?? They did taste good. Need help please! Thank you.

  17. Cheryl...the same thing has happened to me. I thought it was because I was a little over enthusiastic with adding the pumpkin and they were too sticky, but it could've been from too much mixing. Try cutting down on the pumpkin a little and see if they're better. :)
