Piece of (cup) cake
It's no secret I love cupcakes. So when one of my girlfriends shared this little tip to making them in only one step, I couldn't believe it. What's better? They have practically no fat and only a fraction of the calories. (Okay, the cupcakes have practically no fat and a fraction of the calories. The frosting, um, not so much... But who counts the frosting and sprinkles anyway??) It's a recipe you'll have to try to believe.
The secret? A can of diet pop. Diet 7Up, Sprite Zero, whatever. Just add one can to one box of cake mix and bake 'em. That's it. No eggs, oil, or anything else. Really. And it works.
It sounds too good to be true, but it really does work. I'd heard of substituting oil with applesauce to cut calories when baking, but this is nuts! Easy peasy. They taste exactly the same, and trust me, will disappear as quickly as their oil and egg filled counterparts. In fact, looking at that picture is making me want to go eat (um, another) one right now!
